Brown Butter Chocolate Chunk Cookies

A simple Conjured Crumb recipe for your kitchen.

1. Brown the butter.

Melt the butter in a saucepan over medium heat. Continue cooking and stirring until it becomes golden brown and smells nutty. Pour into a mixing bowl and allow it to cool for about 20 minutes.

2. Mix the dough.

Whisk the brown sugar and granulated sugar into the cooled brown butter. Add the eggs and vanilla and mix until smooth.

In a separate bowl, combine the flour, baking soda and salt.

Gradually stir the dry ingredients into the butter mixture just until combined. Fold in the chocolate chunks.

3. Chill.

Cover the dough and refrigerate for at least 1 hour. For even better flavor, let it rest overnight.

4. Scoop.

Scoop the dough onto a parchment-lined baking sheet, leaving a couple inches between cookies. Add a few extra chocolate chunks on top if you’d like.

5. Bake.

Bake at 350°F for 10–13 minutes, or until the edges are lightly golden and the centers are still soft.

Allow the cookies to cool on the baking sheet for several minutes.

Finish with a little flaky sea salt if desired.

Brown butter is one of my favorite simple ways to transform a familiar cookie. Browning the milk solids gives ordinary butter a warm, toasted, almost caramel-like flavor that pairs beautifully with chocolate.

And if you have the patience, let the dough spend the night in the refrigerator.

Sometimes the best ingredient is simply time.
